The interior has a temporary rust prevention treatment that must be removed before use: Boil water in the pan before its first use. After that, wash the pan with water and detergent. Be sure to dry it immediately after washing; don’t leave it out to air dry. Lightly grease the interior with cooking oil (or Muurikka lard); this helps prevent rust and enhances the pan’s cooking properties. After this, your pan is ready to use! Remember to lightly oil both the inside and outside of the pan after each use.

If the pan isn’t dried right after use, the interior may rust. To remove rust and/or any burnt brown grease layer, scrub with a sponge, steel wool, or grill brush, wash with hot water, and dry and grease the surface. The brownish burnt grease layer that forms during use protects the pan from rust, and it’s normal for the pan to develop a mottled appearance after being put into service. Always renew the grease coating whenever it gets damaged or washed away.
