Clean the machine with a dry cloth or kitchen towel—avoid using water. Attach it securely to a sturdy surface using the included clamp. Insert the crank into the side opening. Set the rollers to the widest setting (0 or 1). Unlock the thickness adjustment by pulling the knob outward. Feed a slice of dough (about 1 cm thick) between the rollers while turning the crank. Gradually decrease the roller gap and crank again until the dough reaches the desired thickness. You can skip some steps if you prefer.
Switch the handle to the double cutter attachment for your chosen pasta shape. If the dough is too soft or sticky, dust it with plenty of flour. Dry your pasta on a suitable rack.
For initial cleaning, run a couple of dough sheets through the rollers and discard them. This removes any residual oil from the rollers and cutters.
