Insert the handle into the side opening and set the rollers to the widest setting (0 or 1). Unlock the adjustment by pulling the knob outward. Feed a piece of dough (about 1 cm thick) between the rollers and turn the handle. Gradually reduce the roller gap step by step, turning the handle each time, until the dough reaches the desired thickness. You can skip some steps if preferred. To cut pasta, move the handle to the desired cutter attachment. If the dough is too soft or sticky, dust it generously with flour. Dry the pasta on a suitable rack.
For initial cleaning, run a couple of dough sheets through the rollers and discard them. This removes any oil residues from the rollers and cutters.
