Set the rollers to the widest setting (0 or 1). Unlock the adjustment knob by pulling it outward. Feed a slice of dough (about 1 cm thick) between the rollers and turn the handle. Gradually reduce the roller gap step by step, rolling the dough each time until it reaches the desired thickness. You can skip some steps if needed. Move the handle to the cutter attachment slot for your chosen pasta type. If the dough sticks or feels too soft, dust it generously with flour. Dry the pasta on a proper drying rack.
For the initial cleaning, run a couple of dough sheets through the rollers and discard them. This removes any residual oil from the rollers and cutters.
