Getting Started

  1. Secure the pasta machine firmly to the edge of your table using the included clamp.
  2. For the initial cleaning, pass a couple of sheets of dough through the rollers, then discard the dough.
  3. This process will remove any potential oil residues from the rollers and cutters.

Cleaning:

  • Wipe the rollers from above and below with a soft cloth or brush.
  • Never wash the machine with water or detergent.
  • Under no circumstances should the pasta machine be washed in a dishwasher.

Pasta Dough (4 servings):

  • 300g (4.5dl) durum wheat flour
  • 3 eggs (or 1.5dl of water)

Create a mound of flour in the bottom of a mixing bowl, making a well in the center, and crack the eggs into the well. Knead the dough until smooth, about 10 minutes. After that, wrap the dough tightly in plastic wrap and let it rest in the refrigerator for at least a couple of hours, preferably overnight. Well-rested dough is easier to handle through the machine. Cook fresh pasta for 2-4 minutes in well-salted water.
