Create a mound of flour in the bottom of a mixing bowl, making a well in the center, and crack the eggs into the well. Knead the dough until smooth, about 10 minutes. After that, wrap the dough tightly in plastic wrap and let it rest in the refrigerator for at least a couple of hours, preferably overnight. Well-rested dough is easier to handle through the machine. Cook fresh pasta for 2-4 minutes in well-salted water.
